Well in case you thought I was acting stranger than usual, Typepad went down for a few days. So, you're stuck with me again. :) Let'catch up!
Bible in 90 Days Challenge: Quite a few folks answered the call and joined up with our motley crew: Pammer and her sons, Angela Benson, Heather Tipton and Danica. I think that's it. We'll be starting on January 1. Please pray for us. (especially me!)
Pumpkin Chili: I got quite a few requests for this recipe, so here it is. (Do understand though that recipes to me are like poems, they're never the same twice. I just do what I can with what I have. LOL)
Pumpkin Chili (the busy mama version)
- 1 T. olive oil (or chicken broth or water)
- 1 bag frozen seasoning blend vegetables (onions, red and green peppers)
1 T. minced garlic from the jar or a 1/2 t. garlic powder
1 pound ground turkey (omit for vegetarian version)
2 (14.5-ounce) cans diced tomatoes, undrained
1 (15-ounce) can solid pumpkin - 1 (15-ounce) can tomato sauce
1 (15.25-ounce) can chili beans, drained and rinsed
1/2 envelope chili powder (or a bottle of chili sauce) - optional
- 2 % shredded cheddar
- light sour cream
- HEAT oil and vegetables in large saucepan over medium-high heat. Add onion, bell pepper and garlic; cook, stirring frequently, for 5 to 7 minutes or until tender. Add turkey; cook until browned. Drain.
- ADD tomatoes with juice, pumpkin, tomatoes, beans, and dry chili powder. Stir the pumpkin in thoroughly. Bring to a boil. Reduce heat to low. Cover; cook, stirring occasionally, for 30 minutes.
- ADD a couple handful of cheese to the top of the chili and serve. Top each bowl with a dollop of sour cream.
Makes 4 servings.
I usually serve this with cornbread. :) If you are having company or have a big family like mine double this. I get the large pack of butterball ground turkey and double everything except the pumpkin. This feeds all nine of us with leftovers.
Mama moments: The other night, I woke up with elbows and knees everywhere. The twins had invaded...again.
Twin #2: Hey! You're kicking me. Cut it out.
Mom: (half asleep, thinks) No, he's kicking ME.
Twin #1: (really asleep, says) No, but cats can walk on treadmills. Really.
Twin #2: (screams) Of course they can! But you've got to stop kicking me.
I thought I'd dreamed this, but in the morning, Twin #1 confirmed the story.
Christmas progress: We're chugging along. School is out and we managed to distribute gifts to 7 teachers, 2 bus drivers and 3 classrooms (about 60 kids). Next are the neighbors... Can you say cookie day? Here are the recipes we're going to try.
Book news: PINK is going to be one of the three fiction picks in Charisma magazine in an early 2006 issue! It's also going to be a spring pick for the new ACFW (American Christian Fiction Writers) Book Club (open to the public).

Mary - Okay, I have tried really hard to leave you a comment - but it doesn't seem to be working...so, I am trying again....
I wanted to say thanks for being so witty...and writing about the 'little moments' - I loved your description of 'sleep' talk - happens around here too.....I also had to get 8 teacher gifts, neighbors, stuff, and usually bake...but this time I caved and just got $3 gifts for each.....anyway, whenever I need to be cheered up, I just visit your site ;) Today was one of those days....so thank you!
